Brand Concept
Shirafushi is a coffee bean brand specializing in roasting originating in Ginza that was launched by Bongen Coffee in pursuit of the perfect cup of coffee. With the support of many of Bongen Coffee's customers, we started the brand out of our strong desire to make our customers' relaxation time more special with the perfect cup of coffee. We are working hard to improve the relaxation time of many customers with the coffee beans that we produce.

Selection
Raw coffee beans are mixed with stones, branches, and defective beans, so the first step is to pick and remove these items using a machine or human hands. For better roasting, the process that takes place before is also very important.
Storage
Beans are susceptible to deterioration when left at high temperatures, so we take great care when we store the beans and regulate the temperature of the storage area. We pay close attention to the coffee beans, concerning ourselves with every detail, and store them so that they are at their best condition until right before we put them in the roasting oven.
Roasting
The crucial roasting process is done using a special roasting technique that maximizes the amount of oxygen in order to remove as much of the other flavors that are not part of the original bean as possible, including astringency, excessive bitterness, smokiness, and other odd flavors.
Taste
After getting rid of all the odd flavors like excessive bitterness and astringency, the resulting clear and pure taste will not change even after the beans have cooled down, with the beans becoming more fragrant and flavorful.
